Meyer Lemon Squares

No one should have to live without this recipe for easy mouth-watering Meyer Lemon Squares. My friend Rosie swears by them, and she’s not alone.

Gather It

  • 1 cup flour
  • 1/2 cup butter
  • 1/4 cup powdered sugar
  • 1 cup sugar
  • 1/2 tsp. baking powder
  • 1/4 tsp. salt
  • 2 eggs
  • 2 tbsp. Meyer lemon juice (1 to 2 Meyer lemons or 1 regular lemon)

  • Powdered sugar to sprinkle on top (about 1 tbsp.)

Make It

  • Preheat oven to 350 degrees
  • Mix flour and powdered sugar
  • Cut in butter using a pastry cutter until mixture resembles crumbs

  • Press into 8″ square baking pan, building up on the sides

  • Bake for 30 minutes

  • Mix sugar, baking powder and salt
  • Beat in eggs and Meyer lemon juice, until combined
  • Pour over crust
  • Bake for another 25 minutes

  • Sprinkle with powdered sugar

Gobble It

It’s best to wait until these are cool before inhaling enjoying them. You can make them the night before and set in the fridge, covered with plastic wrap. A little Champagne on a Wednesday evening isn’t the worst thing to wash them down with. Milk does nicely also.
