Pecan Mini Cakes with Roasted Italian Plum Butter

Gather It

  • Butter and flour to butter pans (2 mini loaf pans or 2 mini Bundt pans)
  • 1/2 cup butter, softened
  • 1/4 cup brown sugar
  • 1 egg
  • 1 cup flour
  • 1/2 tsp. salt
  • 1 1/2 tsp. baking powder
  • 1/2 cup Aunt Becky’s Roasted Italian Plum Butter
  • 1/2 cup apple juice
  • 1/2 cup pecan halves, chopped
  • Powdered sugar

Make It

  • Preheat oven to 350 degrees
  • Butter and flour pans
  • Beat together butter and brown sugar on high speed until light and fluffy
  • Beat in egg until combined
  • Combine flour, baking powder and salt
  • Add flour mixture and mix on low speed until combined
  • Mix in Aunt Becky’s Roasted Italian Plum Butter and apple juice
  • Add 1/2 cup chopped pecans and mix on low speed until combined
  • Bake at 350 degrees for 30-40 minutes until toothpick comes out clean
  • Remove from pans
  • Sprinkle lightly with powdered sugar
